Downtown St. Pete has quickly become one of the biggest food and wine destinations in Tampa Bay, and Bin6South is becoming one of the local spots people cannot stop talking about.

In this episode of Talkin’ St. Pete, Ryan Bogden sits down with Chef David and Danielle, the team behind Bin6South, a 12-seat wine cafe located in the heart of Downtown St. Petersburg, Florida.

From creative dishes and rare wines to intimate dining experiences and community connections, this conversation gives an inside look at one of the most unique restaurants in the St. Pete food scene.

A Small Downtown St. Pete Restaurant Creating Big Experiences

Bin6South is not your average restaurant.

The space only has 12 seats inside, with six seats at the bar and six seats at the table. There are also a few outdoor Adirondack chairs where guests can enjoy wine near the garden while they wait or relax before their reservation.

The restaurant offers lunch, dinner, bar seating, reservations, and special tasting menus. For dinner, the table seating is usually offered at 6 PM and 8 PM, while the bar is more first come, first serve.

Because the space is so small, the experience feels personal. Guests are close to the kitchen, close to the wine, and sometimes close enough to other guests that strangers end up becoming friends by the end of the night.

That is part of what makes Bin6South special.

The Food Feels Thought Through Without Feeling Pretentious

Ryan spends a big part of the episode talking about the food because it genuinely surprised him.

Not in a flashy way. More in the sense that every dish clearly had thought behind it.

Chef David explains how much detail goes into the textures, temperatures, presentation, and ingredients on each plate. One dish might look simple at first, but there are layers to everything happening on it.

At one point, David breaks down a roasted asparagus dish with white bean hummus, citrus pickled shallots, pecorino crumble, scallion ash, and spring vegetables.

Then there’s the holographic chocolate dessert.

Yes, actual holographic chocolate.

David explains how he uses tempered chocolate and special diffraction sheets to create this rainbow reflection across the dessert that almost looks like a holographic baseball card under light.

It sounds complicated because it is.

But what makes the conversation fun is hearing how much curiosity and experimentation goes into creating these dishes behind the scenes.

Nothing about the episode feels stiff or overly “fine dining.” It feels like listening to people who genuinely love what they do.

The Wine Side of Bin6South Has Its Own Story

Danielle’s side of the conversation brings a completely different layer to the episode.

She talks about how she originally studied environmental science before falling into the wine world while working in restaurants.

Eventually, she started studying through the Court of Master Sommeliers and became obsessed with learning about wine, regions, soil, climate, grapes, and the stories behind each bottle.

At Bin6South, she built a wine list focused on smaller producers, indigenous grapes, and bottles people may have never tried before.

Instead of just offering familiar wines, she enjoys helping guests discover something new without making it feel intimidating.

That’s probably one of the best parts of the Bin6South experience overall.

Even though the food and wine are elevated, the atmosphere still feels approachable.

You don’t need to know everything about wine to enjoy being there.

The Story Behind the Restaurant Makes It Even More St. Pete

One of the coolest parts of the episode is hearing how Bin6South actually came together.

The restaurant was built out of part of a home in Downtown St. Pete. The owners originally bought the property years ago because it was close to the hospital where one of them worked as an OB-GYN.

Eventually, they transformed part of the house into the restaurant space.

That history gives Bin6South a completely different feeling than a lot of newer restaurant concepts popping up around Tampa Bay.

It doesn’t feel corporate.

It doesn’t feel manufactured.

It feels like something built carefully over time by people who actually care about the experience they’re creating.

And honestly, that’s part of what people love about St. Pete in general.

The city continues to grow, but places that still feel local, creative, and personal are the ones people remember most.

What People Don’t See Behind the Scenes

Another thing the episode does really well is show how much work actually goes into running a small restaurant.

Because the Bin6South team is small, everyone wears multiple hats.

Cooking. Cleaning. Inventory. Wine service. Prep. Dishes. Closing. Customer experience.

Everything.

Chef David also shares that most of the food is being made in an incredibly tiny kitchen using just a few pieces of equipment.

Which honestly makes the level of execution even crazier once you hear it.

The episode gives a real appreciation for local restaurant owners and hospitality workers in Downtown St. Pete who are constantly figuring things out behind the scenes while still creating great experiences for guests every night.
